KEY LIME PIE??????? CHECK

i just put it in the oven :P cant wait to have my 1st bite of it!!! <3 i have never tasted it before! we had a bite of a problem with the pastry but i think i got it right! i hope it is good i started it at 7:15 :P yummmy

KEY LIME PIE

So this is my goal from like 2 weeks ago!!!!! Never got to it so I want to do it this weekend!

2 cups sugar

1/4 +2 tablespoons cornstarch

1/4 teaspoon salt

1/2 cup fresh key lime juice

1/2 cup cold water

3 eggs, separated

2 tablespoons butter

1 1/2 cups boiling water

1 teaspoon grated fresh key lime peel

green food coloring (optional)

1/4 teaspoon cream of tartar

pastry for 9 inch pie

1. combine 1 1/2 cups of sugar, cornstarch and salt in a 2-quart saucepan. Add the key lime juice, water and egg yolks; blend well. Add butter and gradually add boiling water. bring mixture to a boil over medium heat and cook 3 minutes, stirring constantly. Stir lime peel and green food coloring. take off heat and cool for 20 minutes.
2. beat egg whites in bowl of mixer on high speed until frothy. Add cream of tartar and whip until soft peeks form. Continuing on high speed, gradually add the rest of the sugar, beating until stiff peaks form.
3. Pour cooled filling into pie shell. lightly pile meringue on filling and spread to edge. bake at 35o°F for 15 minutes, or until lightly browned. cool completely before eating!!!!

Sports

I went to my first basketball practice yesterday! We had to run 2 laps cause i didn't run around the coach when we were doing a drill. He says we are a team and if I do it everyone else should be able to do it to. What ever! I am just happy we have Ron as a coach and not just Ryan. If we just had Ryan I think I wouldn't be playing!!!! Yes he is that bad!!!
